Carrots (however many you like) diced

1-2 onions diced

Potatoes (whatever kind and however many you like) diced

Bottle of Clamato juice (the larger size) – I use V8 Spicy when on Whole 30. Clamato has sugar added

Bottle of clam juice (check the ingredients)

1-2 cans of diced tomatoes (check the ingredients)

Assortment of canned clams – minced, chopped and whole – minced and chopped usually have added sugar (I used 3 cans of whole clams this week, that might have been a can too many)

Salt and Pepper to taste (I dump a good bit of pepper in because I like it spicy)

Saute the carrots and onions in coconut oil until the onions are translucent.  Somehow Mama can skip this and still get her carrots soft enough.  Must be Mama magic. Add everything else but the clams and simmer for 60 minutes.  Add the clams with the juice and simmer for another 30 minutes. See if your root vegetables are as soft as you like them and cook longer if necessary.  I actually think it is better the second day.
